In 2000 St. Anthony East had 2,148 people, an 18 percent increase from 1980. The city grew by 3 percent in the same period.

Population growth between 1980 and 2000 was the result of a 40-percent increase in residents from the ages of 18 to 64. The youngest population group – children and adolescents – decreased by 5 percent, and the senior population decreased by 26 percent.

Although St. Anthony East's population stayed predominantly white, there were 133 fewer white residents in 2000 than there were in 1980. However, other ethnic groups more than compensated for that loss: there were 156 more black residents and 143 more Hispanic residents added to the neighborhood during this time. Combined, Asians and American Indians contributed 98 additional residents.
